Second in Italy, fourth in the world. On paper, the accolades are all there—and they are proudly showcased. But paper must stand the test of reality. We dropped by Confine because we don’t care for “hearsay”; we are driven to go all the way, and, frankly, because we’d never pass up a pizza tasting.
SIMPLE DOESN’T MEAN EASY
In a society of the perfect selfie, of reels crafted for the algorithm, and of glasses filled with smoky clouds that feel a bit “off,” the Margherita here is simply called Semplice.
“Simple” does not mean easy. This is where the journey begins with Francesco Capece and Mario Ventura, who welcome us to Confine. Let’s be clear: pizza no longer has borders (confini). The stereotype that great pizza can only be found in Naples was debunked long ago, perhaps ever since the first pizzeria in the world was born in New York.
THE SALERNO IDENTITY AND THE HANDS OF ARTISANS
The project’s technical and human foundations are rooted in the Salerno region. It is a visceral bond that defines Confine’s identity: a heritage honored with pride, capable of evolving without being trapped by nostalgia. Today, this network of excellence has extended to Milan, creating a direct bridge between its origins and the metropolis, where every supplier remains a vital piece of a human and qualitative mosaic.
THE EXPERIENCE IN THE GLASS
In this philosophy, wine is not a mere accompaniment; it is a liquid narrative. The selection is a core part of the experience:
- Territorial Identity: A tribute to Campania and the finest expressions of Italian viticulture.
- Harmony and Contrast: Each label is chosen to dialogue with the dish, creating symphonic pairings or surprising counterpoints.
- Sensory Journey: The tasting becomes a total immersion into the flavors and stories of the land, turning every sip into a moment of conscious discovery.
WHAT REMAINS AFTER CLIMBING THE RANKINGS
In a fast-paced world obsessed with climbing leaderboards, what actually remains once you sit down at the table? What remains is the truth of a proposal that isn’t at war with others and perhaps doesn’t need to be.
Francesco and Mario aren’t selling a “glossy” product. They are selling a vision where refined technique meets the raw materials of artisans and a curated wine selection. Theirs is an irreverent challenge: to prove that you can reach the top of the world by offering both the simplicity of an iconic pizza and the audacity of more elaborate creations, all while staying true to a concept that is as basic as it is difficult to master.
Simplicity, precisely.
